250L Ex-Pedro Ximenez Sherry hogsheads which have been used to finish fine Innis and Gunn Original PX-Edition Beer.
These Hogsheads have been made from a blend of both American and European oak and toasted to a medium level to caramelise those wonderful wood sugars. These casks were initially filled with Oloroso sherry for a period of 12 months before being emptied and refilled with Pedro Ximinez sherry for a period of 24 months. This means that the wood is deeply impregnated with those wonderful characteristics of the PX sherry such as sweet rich demerara sugar, treacle and Christmas cake.
Post-emptying, these casks were shipped to the Innis and Gunn Brewery in Edinburgh and filled with their flagship Original Beer for a 3-month period. Based in Edinburgh, Innis and Gunn have been producing fine Craft beers Since 2003.
The multiple fills of these casks are going to create a whisky which will be incredibly special and absolutely packed with flavour. Our orchard fruit driven new make spirits will complement hints of sultana, dates, and citrus fruits of the Sherry fillings.
