The Untold Oak
We’ve gone to the corners of South East Asia to the peaks of the Andes Mountains introducing you to the likes of Colombian, Mongolian and Greek Oak. Now we come closer to home, to the mountainous region that forms the border between France and Spain where Pyrenean oak (Quercus Pyrenaica) can be found. Native to the Iberian Peninsula and known locally as "Rebollo", this oak type has seasoned fine wines and combines the structure of French oak with the aromatic intensity of American oak. Appreciated by Spanish winemakers for its richness, we expect it to add new layers of depth and complexity to our spirit.

In northwestern Greece, the rare evergreen Quercus ilex, known as Truffle Oak, has been revered since ancient times as a symbol of strength and wisdom. For the first time, we are offering virgin Greek Oak casks from the Amfilochia region. Their naturally high tannin content promises bold spice balanced by the orchard fruit character of our New Make Spirit.
In the lofty peaks of the Colombian Andes, nearly 4,000 metres above sea level, a rare oak species grows in volcanic soil. This is our first-ever release of Colombian Virgin Oak casks, ready to be filled with our award-winning peated or unpeated New Make Spirit.
In the remote forests of northeast China grows a rare oak prized for the distinctive character it imparts. This is our first-ever release of Mongolian Virgin Oak casks, offering delicate floral notes, bright gooseberry, and warm sandalwood spice when paired with our award-winning peated or unpeated New Make Spirit.
