The critically acclaimed 1610 restaurant, nestled within Dumfries’ historic Globe Inn, has evolved into 1610 by Fraser Cameron.
This rebrand marks a defining moment for the south of Scotland’s culinary landscape, firmly placing the spotlight on its exceptionally talented Head Chef. While the name changes, the bedrock of excellence remains; guests can expect the same refined, considered, and deeply rooted standards that have earned the restaurant its stellar reputation.
Reflecting on the restaurant’s progression, Head Chef Fraser Cameron said:
“This transition is all about taking the restaurant forward under my full creative vision. We’ve built something incredibly special here, but now is the time to push boundaries, elevate our flavour profiles, and showcase the very best of our local larder exactly the way I envision it.”
He added:
“A new chapter begins for 1610 and for me personally. My time at The Ritz opened my eyes to new levels of precision and craft, and I am incredibly proud to bring that quiet ambition back home to our guests, guiding our commitment to excellence into the future. With the past few years of mentorship from Jonathan Brett, and the unwavering support of David Thomson and Teresa Church, I feel really excited and honoured to be writing the next verse of The Globe’s history.”
A Proven Legacy of Culinary Excellence 
This exciting evolution builds upon a foundation of critical acclaim. The restaurant has proudly held a Michelin Guide listing since 2022, alongside a prestigious 2 AA Rosette grading.
Fraser Cameron’s rising-star status in the Scottish culinary scene was further cemented when he won the prestigious Hospitality Industry Trust (HIT) Scotland Legacy Scholarship Award. As part of this career-defining accolade, Fraser completed an elite stage (culinary residency) at the world-renowned, 2 Michelin-starred restaurant at The Ritz in London last November.
Bringing those refined, world-class techniques back to Dumfries, Fraser is now ready to fully realise his culinary vision. In the coming months, Fraser will introduce a series of thoughtful developments across both the restaurant and The Globe Inn, each one designed to deepen and refine what 1610 has always stood for. This is a progression, guided by vision, craft, and a commitment to excellence.
