Our next recommendation comes from a famous Spanish winery. Sanchez Romate, makes Cardenal Mendoza, a delicious and rich brandy from grape wine. The brandy is aged for 15 years in a system called Solara, where the barrels are arranged in rows and the older ones are mixed with the younger ones. These 500l butts have been used for 70 years, first for sweet sherry and then for brandy, this gives a unique flavour to the spirit that matures within. We expect the mature peated whisky to have aromas of dried fruits, caramel, light spice and roasted coffee beans.
